The natural process begins with selecting ripe coffee cherries with a high sugar content and fleshy fruit. The varieties used are Typica, Lini S, Sigararutang, and Kartika. The cherries are dried in the sun for 21 to 28 days until the moisture content is below 12 percent then the cherries are rested for two months. After resting, the coffee is hulled, sorted for size, and density, and further sorted by hand for quality. After sorting, the green beans are promptly packed for freshness and flavor.
