The natural begins with a selection of fully ripe cherries, pulped to have 70% of mucilage remaining before being dried in the sun for 21 to 28 days until the moisture content is below 12 percent, then rested for two months. After resting, the coffee is hulled, sorted for size, and density, and further sorted by hand for quality.
