The Honey Anaerobic process begins with the selection of ripe coffee cherries with thick fruit and a high sugar content. The coffee cherries are then fermented for four to five days and then pulped and dried for another 8 to 10 days until the moisture content is less than 12%. The cherries are then rested for 2 months, then hulled and sorted for size, density, and quality. The green beans are then promptly packaged for flavor and freshness.
