Honey Anaerob | Blond Roast Coffee

The Honey Anaerobic process begins with a selection of fully ripe cherries, fermented for 4 to 5 days and then pulped to have 70% of mucilage remaining. Cherries are then dried in the sun for 8 to 10 days until the moisture content is less than 12%, rested for 2 months, then hulled and sorted for size, density and quality. The green beans are then promptly packaged for flavor and freshness. | Cupping Score: 86
