The Extended Natural process begins with coffee cherries selected for ripeness, high sugar content, and thick fruit. The cherries are selected from Typica, Lini S, Sigararutang, and Kartika varieties. The ripe coffee cherries are fermented and then dried in the sun for three to four weeks until the moisture content is below 12%. The cherries are then rested for 2 months, hulled and sorted for size, density, and quality then promptly packaged for freshness and flavor.
