Black Honey | Medium Roast Coffee | Sample
The Black Honey process begins with a selection of fully ripe cherries, pulped to have 70% of mucilage remaining before being dried in the sun for 8 to 10 days, until the moisture content is less than 12%. After drying, the cherries are rested for 2 months, then hulled and sorted for size, density, and quality. The green beans are then promptly packaged for flavor and freshness.

Nice acidity. Sweet but dry aftertaste that doesn’t linger.
